Ingredients

4 green onions , finely chopped
2 garlic cloves , minced
2 tablespoons olive oil , divided
1 bag fresh Baby Spinach
1/4 cup fresh basil
1/2 teaspoon salt

1 package refrigerated pizza dough ( I have used both whole wheat dough and crescent rolls with great results ! )
1/4 cup crumbled feta cheese
2 tablespoons toasted pine nuts
1 tablespoon butter , melted
1/4 cup finely shredded parmesan cheese

Instructions

1.Preheat your oven to 375°F (190°C).
2.In a skillet, sauté the green onions and garlic in 1 tablespoon of olive oil until they are fragrant and tender.
3.Add in the fresh baby spinach, basil, salt, and black pepper, and cook until the spinach starts to wilt and the basil is fragrant.
4.Roll out the pizza dough on a floured surface and brush with the melted butter.
5.Sprinkle the dough with the feta cheese and toasted pine nuts, leaving a 1-inch border around the edges.
6.Spoon the spinach mixture over the feta cheese, spreading it out evenly.
7.Roll up the dough tightly, pinching the edges to seal the roll.
8.Brush the top of the roll with the remaining 1 tablespoon of olive oil and sprinkle with the shredded parmesan cheese.
9.Bake for 20-25 minutes or until the dough is golden brown and the cheese is melted and bubbly.
