Ingredients

1 tablespoon olive oil
1 cup onion , finely chopped
1 garlic clove , large , finely minced
1/2 teaspoon fennel seed
1 package frozen chopped spinach , thawed and squeezed dry
1 lb lean ground beef
1/2 lb Italian sausage ( hot or sweet )
1 cup ricotta cheese
1/2 cup tomato juice ( preferably fresh ) or 1/2 cup beef stock
1 large egg
1/2 cup fresh breadcrumb
1/4 cup parmesan cheese , freshly grated
2 tablespoons fresh parsley , minced
2 tablespoons fresh basil , minced
1/2 teaspoon salt
1/2 cup marinara sauce ( optional )

Instructions

1.Preheat oven to 375°F. Line a large rimmed baking sheet with parchment.

3.Add the spinach and sauté for 2 more minutes until heated through.
4.In a large bowl, combine the beef, sausage, ricotta, tomato juice or beef stock, egg, breadcrumbs, parmesan cheese, parsley, basil, salt, and sautéed vegetables.
5.Mix well and pat into a loaf shape on the prepared baking sheet. Spread the marinara sauce over the top, if using.
6.Bake for 1 hour and 15 minutes or until the internal temperature reaches 160°F.
7.Remove from oven and allow to rest for 10-15 minutes before slicing and serving.
