8 -12 roma tomatoes
1 package frozen chopped spinach
1 cup provolone cheese , shredded
1 tablespoon garlic , minced
1/2 cup parmesan cheese , grated

Instructions

1.Preheat your oven to 375°F.
2.Cut the stem off the Roma tomatoes and scoop out the insides.
3.In a skillet, cook the spinach until it is fully defrosted and all excess water is evaporated.
4.Add garlic, parmesan cheese, salt and pepper to the spinach and stir until combined.
5.Stuff each tomato with this spinach and cheese mixture.
6.Sprinkle the provolone cheese on top of the stuffed tomatoes.
7.Bake the tomatoes in the oven for 18-20 minutes until the cheese is melted and the tomato is cooked through.
