250 g fresh ricotta
250 g fresh cottage cheese
2 tablespoons caster sugar
24 sheets phyllo pastry
100 g unsalted butter , melted
ground cinnamon ( to serve )

Instructions

1.Preheat your oven to 365°F (185°C)
2.In a large mixing bowl, combine the softened cream cheese, ricotta, cottage cheese, and caster sugar. Mix thoroughly until smooth.
3.Lay out one sheet of the phyllo pastry and brush it generously with melted butter. Top with another sheet and repeat the process until you have six sheets stacked on top of each other.
4.Cut the stacked phyllo pastry into six equal-sized rectangles.
5.Place a tablespoon of the cheese mixture at one end of each rectangle, then carefully roll the pastry up and over the filling, tucking in the sides as you go, until you have a neat roll.
6.Repeat with the remaining five sheets of pastry and cheese mixture until you have six rolls.
7.Brush each roll with melted butter and place them on a baking tray lined with baking paper.
8.Bake the rolls for 20-25 minutes or until they are golden brown.
9.Remove them from the oven and dust them with ground cinnamon before serving.
