Ingredients

2 lbs bottom round steaks , trimmed of fat and cut into 1-inch cubes
3/4 lb cremini mushrooms or 3/4 lb white button mushrooms
3 tablespoons all-purpose flour
2 cups brown ale or 2 cups dark beer
4 large carrots , peeled and cut into 1-inch pieces
1 large onion , chopped
1 garlic clove , minced
1 1/2 tablespoons Dijon mustard
1 teaspoon caraway seed
3/4 teaspoon salt
1/2 teaspoon pepper , freshly ground
1 bay leaf

Instructions

1.Preheat a large skillet over medium-high heat. Add 2 teaspoons of canola oil and swirl it around the skillet to coat the bottom.
2.Add the beef cubes in batches, searing each side for 1-2 minutes until nicely browned. Remove from skillet and transfer onto a plate.
3.Add the remaining canola oil to the skillet, along with mushrooms. Cook for 5-7 minutes, until tender and nicely browned.
4.Sprinkle flour over mushrooms and stir to combine. Cook for an additional 1-2 minutes.
5.Transfer mushrooms to a slow cooker. Add brown ale, carrots, onion, garlic, Dijon mustard, caraway seed, salt, pepper, bay leaf, and beef cubes. Stir to combine.
6.Cover and cook on low for 8-10 hours or on high for 4-6 hours, until beef is tender and cooked through.
7.Serve hot, garnished with fresh parsley or thyme.
