Ingredients

2 1/4 - 2 1/2 cups all-purpose flour

1 package fast rising yeast
1 teaspoon salt
1 -2 cup water
1 -2 cup milk
3 tablespoons honey
1 tablespoon butter or 1 tablespoon margarine
1 large egg
1 tablespoon butter , melted ( or margarine )

Instructions

1.In a large bowl, combine 2 cups all-purpose flour and whole wheat flour, ground flax seeds, yeast, and salt.
2.In a saucepan, heat water, milk, honey, and butter until warm.
3.Pour the warm milk mixture into the dry ingredients and mix well.
4.Add egg and mix, then add enough remaining all-purpose flour to form a soft dough.
5.Knead the dough until smooth and elastic. Divide the dough into 36 pieces, and shape each piece into a ball.
6.Place three balls in each section of a greased muffin tin. Brush with melted butter or margarine.
7.Cover the muffin tin with a towel and let them rise in a warm place until doubled in size, around 30 minutes.
8.Preheat oven to 375°F. Bake for 15-20 minutes until golden brown.
