Ingredients

1/3 cup minced fresh cilantro
1/3 cup fresh lime juice

1 cup fresh corn kernels ( about 2 ears )
6 fat-free flour tortillas
2 cups chopped tomatoes
2 tablespoons low-fat sour cream

Instructions

1.In a bowl mix minced cilantro, lime juice, water, oregano, cumin, salt, black pepper, red pepper flakes, and minced garlic
2.Take out 1/2 cup of the mixture, set it aside, and pour the remaining over the flank steak, set it aside for 10 mins
3.Heat a pan coated with cooking spray, add onions and steak and cook for 5 mins
4.Add red bell pepper, yellow squash and zucchini and cook for 3 more mins
5.Add corn, stir briefly
6.Warm the tortillas in separate pan
7.Fill each tortilla with steak and vegetable mix, top with tomatoes
8.Drizzle the set aside mixture to the top, garnish with sour cream
