Instructions

1.Preheat oven to 150C/300F.
2.In a small saucepan, combine granulated sugar, water, lemon juice, and cayenne pepper. Cook over medium heat, stirring occasionally, until the sugar is melted and amber-colored.
3.Quickly pour the caramel into 6 ramekins, swirling to coat the bottom.
4.In a food processor, grind the almonds and sugar together until finely ground.
5.Add orange zest, eggs, heavy cream, and orange juice to the food processor. Pulse until well combined.
6.Pour the mixture over the caramel-filled ramekins.
7.Place the ramekins in a baking dish filled with hot water.
8.Bake for 35-40 minutes until set.
9.Remove from the oven and let cool to room temperature.
10.Refrigerate for at least 2 hours.
11.When ready to serve, run a knife around the edge of the flan and invert onto a plate.
