Flame Tart or Flammkuchen is a traditional dish from the Alsace region in France, but it's also popular in Germany. The name refers to the way this thin-style pizza is cooked in a wood-fired oven, where it's supposed to cook very quickly due to the high heat. This version of the tart is made with thinly sliced apples and onions, which add a sweet and savory contrast to the tart. The sour cream and goat's cheese provide richness and creaminess, while the hazelnuts add a crunchy texture. It's a tasty appetizer to share with friends and family or as a light meal with a salad on the side.

Instructions

.To make the dough, combine the flour, yeast, warm water, sugar, salt, and oil in a bowl. Knead the dough for about 10 minutes, until it is smooth and elastic.
.Cover the dough with a clean kitchen towel and set it aside to rise for about 30 minutes in a warm place.
.Preheat your oven to 220°C (425°F).
.Roll the dough out thinly and transfer it to a baking sheet lined with parchment paper.
.Spread the sour cream over the dough to within about 1 cm of the edge.
.Thinly slice the apples and onions and arrange them on top of the sour cream.
.Crumble the goat's cheese over the top of the tart.
.Sprinkle with chopped hazelnuts, thyme leaves, and sage leaves.
.Season with salt and black pepper.
.Bake the tart for about 15-20 minutes, until the crust is golden brown and the goat's cheese is melted and bubbly.
