Ingredients

2 cups whole milk
1/4 teaspoon salt
2 tablespoons distilled white vinegar
Making homemade ricotta cheese is very easy and requires just three ingredients: whole milk, salt, and distilled white vinegar. This cheese is soft, creamy, and mildly sweet, making it an ideal addition to sweet or savory dishes. It can be used in various Italian dishes such as lasagna, stuffed shells, and baked ziti, or enjoyed on toast, pizza or salads. You can also add herbs or spices of your choice to enhance its flavor.

Instructions

1.Add whole milk and salt to a non-reactive saucepan and heat it over medium heat until it reaches 190°F, stirring regularly to prevent scorching.
2.Once the milk reaches 190°F, remove from heat and add distilled white vinegar, stirring gently to combine.
3.Allow the mixture to sit undisturbed for 5 minutes, until curds have formed and the whey has separated
4.Line the strainer with cheesecloth and place it over a clean bowl. Slowly pour the curds and whey into the strainer and let it strain for 5-10 minutes.
5.Once most of the liquid has drained out, tie up the cheesecloth and let the cheese curd hang for another 5 minutes to allow more liquid to escape.
6.Unwrap and transfer the ricotta cheese to a resealable container and store in the refrigerator for up to 5 days.
