2 tablespoons diced water chestnuts

2 tablespoons hoisin sauce

4 boneless skinless chicken breast halves

1/3 cup red plum jam
2 tablespoons white wine vinegar
1 tablespoon ketchup
1 teaspoon garlic and red chile paste or 1 teaspoon chili-garlic sauce

Instructions

1.Preheat oven to 375°F.
2.In a medium saucepan, bring vegetable broth to a boil.
3.Add rice, cover, and reduce heat to low. Cook for about 20 minutes, until tender.
4.In a medium bowl, combine cooked rice, almonds, water chestnuts, scallions, garlic, salt, and pepper.
5.In a small bowl, whisk together white wine vinegar, hoisin sauce, and sesame oil.
6.Cut a pocket into the thickest part of each chicken breast being careful not to slice through the other side.
7.Fill each pocket with rice mixture and seal the opening with a toothpick.
8.Heat vegetable oil in an oven-safe skillet over medium-high heat. Add chicken and cook for 3 minutes per side or until browned.
9.Transfer skillet to oven and bake for 20-25 minutes or until chicken is cooked through.
10.Meanwhile, in a small saucepan, whisk together plum jam, white wine vinegar, ketchup, and garlic and red chile paste or chili-garlic sauce. Bring to a simmer and cook for 2-3 minutes until slightly thickened.
11.Spoon hot sour sauce over chicken breasts and garnish with sesame seeds if desired.
