Ingredients

1 1/2 lbs red new potatoes ( one small bag )
2 tablespoons fresh lemon juice
1 tablespoon fresh thyme
1/2 teaspoon crushed red pepper flakes ( to taste )
4 tablespoons olive oil
kosher salt
black pepper
4 skinless fresh fish fillets
1 shallot , thinly sliced
1 bunch kale , thick stems discarded and leaves torn into bite-sized pieces or 12 cups kale
Fish with Spicy Lemon-Thyme Vinaigrette is a mouth-watering and healthy dish that is perfect for any occasion. Instructions

1.Preheat your oven to 425°F (220°C).
2.In a large bowl, whisk together the lemon juice, thyme, red pepper flakes, and 2 tablespoons of olive oil. Season with salt and pepper to taste.
3.Toss the potatoes with the vinaigrette and spread them out in a single layer on a baking sheet. Roast the potatoes in the oven for 20 minutes, stirring occasionally.
4.Season the fish fillets with salt and pepper on both sides.
5.Once the potatoes have been in the oven for 20 minutes, push them to one side of the baking sheet.
6.Place the fish on the other side of the baking sheet and top each fillet with a few slices of shallot. Drizzle the remaining 2 tablespoons of olive oil over everything on the baking sheet.
7.Return the baking sheet to the oven and continue to roast until the fish is cooked through and the potatoes are tender, about 10-15 minutes.
8.In the meantime, in a large bowl, massage the kale with a pinch of salt for a few minutes until it wilts slightly. Toss the kale with the remaining vinaigrette.
