Ingredients

1 kg hamour fish , cleaned , washed and de-boned
8 spring onions , washed and finely chopped
salt
1/2 teaspoon white pepper
3 -4 tablespoons dried lime powder
2 cups fresh coriander leaves , washed and chopped
650 g burghul ( crushed wheat )
Fish Kibbeh is a popular dish in the Middle East, often enjoyed as a snack or a main course. Instructions

1.In a food processor, blend the fish until it is ground up.
2.In a separate large bowl, mix together burghul, coriander, spring onions, salt, white pepper, and dried lime powder.
3.Add the ground fish to the mixture and mix well.
4.Use your hands to knead the mixture until it becomes a doughy consistency.
5.Divide the mixture into small portions and form them into oval-shaped balls.
6.Press them lightly to form an oval shape again but this time, creating a hollow in the middle with your thumb.
7.Continue to make the rest of the portions this way.
8.In a deep-frying pan, heat vegetable oil until hot.
9.Gently slide the oval-shaped balls into the hot oil and fry them until they are golden brown in color.
10.Carefully remove them and place them on paper towels to drain any excess oil off before serving.
