Ingredients

1 kg fish fillet , cut into smallish large pieces
1/2 cup water
2 tablespoons tomato paste
6 garlic cloves
1 large white onion , diced
2 cups rice ( I use Basmati and am sure to soak it the required mount of time )
3 cups water
1 vegetable bouillon cube ( I use homemade vegetable stock )
1/2 tablespoon arabic mixed spice ( Baharat Aka Middle East Mixed Spices - the Real Mix )
sea salt & freshly ground black pepper , to taste
4 tablespoons butter
1/4 cup pine nuts , toasted in a dry frying pan
1/4 cup fresh cilantro

Instructions

1.In a large pot, add the water, tomato paste, garlic, and diced onion. Cook over medium heat until the onions are softened.
2.Add the fish, sea salt, black pepper, and Arabic mixed spice to the pot, and pour in the water. Bring to a boil and reduce the heat to low. Cover and let cook until the fish is cooked through, which should take approximately 10-15 minutes.
3.In a separate pot, cook the rice according to the directions on the package, using the vegetable bouillon cube instead of salt to season the water.
4.In a frying pan, melt the butter and add the toasted pine nuts. Cook until the pine nuts are golden brown.
5.Add the cooked rice to the pot with the fish. Gently stir the two together.
6.Top the rice and fish with the toasted pine nuts and fresh cilantro. Serve and enjoy!
