Ingredients

2 1/4 lbs firm white fish
1/2 teaspoon Accent seasoning
1 cup water
1 teaspoon margarine
1 medium onion , cut into large chunks
1 small tomatoes , chopped
1 1/2 teaspoons vinegar
4 1/2 teaspoons lemons or 4 1/2 teaspoons lime juice
1 lime , sliced
5 ounces frozen cut okra
3/4 cup fine yellow cornmeal
1 1/4 cups boiling water
1 tablespoon butter
1/8 teaspoon salt

Fish and fungi is a traditional dish from the British Virgin Islands. Instructions

1.Season the fish with Accent seasoning and set aside.
2.In a large pot, bring 1 cup of water to a boil and add margarine, onions, tomatoes, vinegar, lime juice, and sliced lime. Cook for about 5 minutes.
3.Add the seasoned fish, okra, and enough water to just cover the fish. Cover the pot and simmer for about 20-25 minutes, or until the fish is cooked through.
4.In a separate pot, combine the cornmeal, boiling water, butter, salt, and pepper. Cook, stirring constantly, until the mixture is smooth and thick. Remove from heat and let cool.
5.Wet a deep dish or bowl with cold water, and pour the cornmeal mixture into it. Let it cool and set.
6.When the fish is done cooking, remove it from the pot and serve it with the slices of fungi.
