Ingredients

1 medium head of cabbage ( blanched )
toothpick
1 lb steamed fish , flaked
1 1/2 cups cooked couscous
1 celery rib , fine diced
1/2 cup red bell pepper , fine diced
1/2 cup green pepper , fine diced
1/2 cup scallion , fine diced
1/2 cup black olives , fine diced
1 tablespoon lemon juice
1 teaspoon lemon zest
1 egg , beaten well
1 teaspoon all purpose Greek seasoning ( or you can use my recipe below )
2 tablespoons fresh parsley , finely chopped
1 tablespoon olive oil
2 cans diced tomatoes
1 can tomato sauce
1 can artichoke hearts , quartered drained
1 large onion , cut in quarters and thin sliced
1 cup white wine
1 teaspoon all purpose Greek seasoning , you can add a bit more if you like ( I use McCormick 's , but there are other brands available )
1 teaspoon minced garlic
1 teaspoon olive oil
1 cup black olives , halved

Instructions

1.Preheat your oven to 375 degrees Fahrenheit.
2.In a large bowl, combine the steamed fish, cooked couscous, celery, red bell pepper, green pepper, scallion, black olives, lemon juice, lemon zest, beaten egg, Greek seasoning, fresh parsley, and olive oil. Mix well.
3.Taking the blanched cabbage leaves one at a time, spoon approximately 1/4 cup of the fish and couscous mixture onto the center of each leaf. Fold the sides of the cabbage leaf over the fish and couscous mixture, then roll the leaf up from the bottom to the top, like a burrito. Secure the roll with a toothpick.
4.Place the cabbage rolls in a large baking dish, seam side down. In a separate bowl, mix together the diced tomatoes, tomato sauce, artichoke hearts, sliced onion, white wine, Greek seasoning, minced garlic, and olive oil. Pour the mixture over the cabbage rolls.
5.Cover the baking dish with foil and bake for 45 minutes. Remove the foil and add the halved black olives to the dish. Bake uncovered for an additional 10-15 minutes.
6.Serve hot, garnished with fresh parsley if desired.
