Ingredients

1 large onion , finely chopped
3 tablespoons flour
1 can tomato sauce
1 tablespoon chili powder
1/2 teaspoon cumin
1 1/2 teaspoons salt
1 rotisserie-cooked chicken , meat shredded
1 lb muenster cheese , grated
3 chipotle chiles in adobo , seeded and finely chopped
12 corn tortillas

Instructions

1.Preheat the oven to 375°F.
2.Heat the vegetable oil in a saucepan over medium heat and add the onions. Cook until onions are golden brown, about 10 minutes.

4.Add the tomato sauce, chili powder, cumin and salt. Stir, reduce heat to low and simmer for 10 minutes.

6.Heat the corn tortillas in the microwave for 30 seconds.
7.Spoon a small amount of the sauce onto each tortilla, add a scoop of the chicken cheese mixture and roll up tightly.
8.Place the enchiladas seam-side down in a greased baking dish and cover with remaining sauce.
9.Bake for 20 minutes or until heated through.
