Ingredients

1 serrano pepper
1 banana pepper
1 small jalapeno chile pepper
1/4 cup canola oil
1/4 cup all-purpose flour

1 tablespoon file powder
1 cup fire-roasted tomatoes
1 sweet potato , peeled and cubed
parsnip , peeled and cubed
1 cup canned red beans , rinsed and drained
1 cup canned black-eyed peas , rinsed and drained
2 cups frozen cut okra , thawed
Gumbo is a traditional Louisiana dish that usually contains meat, seafood, and sausage. Instructions

1.Preheat the oven to 400°F.
2.Roast the serrano pepper, banana pepper, and jalapeno chile pepper in the oven for 10-15 minutes or until the skin is charred.
3.Remove the peppers from the oven and let them cool. Peel off the skin, remove the seeds, and chop the flesh.
4.In a large pot, heat the canola oil over medium heat. Add the flour and stir constantly for 10-15 minutes or until it turns dark brown.
5.Add the celery, onion, and green bell peppers. Cook for a few minutes until they are softened.
6.Add the vegetable broth, garlic, Cajun seasoning, smoked paprika, and file powder. Stir to combine.
7.Add the fire-roasted tomatoes, sweet potato, parsnip, red beans, black-eyed peas, and chopped peppers.
8.Bring to a boil, then lower the heat and let it simmer for about 45 minutes, stirring occasionally.
9.Add the okra and cook for another 10 minutes. Remove from heat and let it sit for 10-15 minutes before serving.
