5 cups all-purpose flour
2/3 cup sugar
1 teaspoon ground cardamom
1 1/4 teaspoons salt
3/4 cup cold unsalted butter , cut into small pieces
1 1/4 cups warm whole milk
1 large egg , lightly beaten
1 large egg yolk , lightly beaten with
1 tablespoon water , for egg wash

Instructions

1.In a small bowl, combine raisins and warm water. Allow raisins to soak for 10 minutes.
2.In a large mixing bowl, combine flour, sugar, salt, and cardamom. Whisk ingredients until thoroughly combined.
3.Add cold, small pieces of butter to the flour mixture. Using a pastry cutter or your fingers, mix the butter and flour together until it resembles coarse crumbs.
4.In a separate bowl, combine warm milk, egg, and egg yolk. Whisk together until the mixture is light and frothy.
5.Add the milk mixture to the flour mixture and stir to combine. If the dough is too sticky, add more flour 1/4 cup at a time.
6.Knead the dough on a floured surface for 5-7 minutes or until it becomes smooth and elastic.
7.Place the dough in a lightly greased bowl and cover with a cloth. Allow it to rise in a warm area for about 60-90 minutes, or until it has doubled in size.
8.After the dough has risen, punch it down and knead in the raisins. Shape the dough into a circle or braid and place it on a lightly greased baking sheet.
9.Brush the top of the dough with the egg wash.
10.Allow the bread to rise once more for about 60 minutes.
11.Preheat the oven to 375°F. Bake the bread for 30-40 minutes, or until the top is golden brown and sounds hollow when tapped.
12.Cool completely before slicing and serving.
