Ingredients

1 lb fresh chanterelle mushrooms , cut in 1/2 inch pieces or 1 cup dried mushroom
1 onion , chopped
1/4 bunch parsley
4 tablespoons butter
4 tablespoons all-purpose flour
2 quarts beef stock or 2 quarts chicken stock
1/2 cup sherry wine
1 cup heavy cream
1/2 teaspoon salt
1/4 teaspoon white pepper

Instructions
