Instructions

1.In a large mixing bowl, mix together the grated carrots, onion, breadcrumbs, eggs, milk, flour, thyme, nutmeg, cumin, oil, salt, and pepper until well combined.
2.Heat a non-stick skillet over medium heat, then ladle the batter onto the skillet to form pancakes about 4 inches in diameter. Cook for 2-3 minutes per side or until golden brown.
3.Meanwhile, in a medium saucepan, combine the cranberries, maple syrup, orange juice and rind, ginger, cardamom, and cinnamon over medium heat. Stir occasionally until the cranberries burst and the mixture thickens, about 10-12 minutes.
4.Serve the pancakes hot with a dollop of cranberry sauce on top.
