6 large egg whites

Financiers are a classic French pastry that originated in the financial district of Paris in the 19th century. Instructions

1.Melt the butter in a small pan and cook until it turns golden brown and smells nutty, then set aside to cool.

3.In a separate bowl, beat the egg whites until frothy.
4.Gradually stir the dry ingredients into the egg whites.
5.Fold in the browned butter until everything is well combined.
6.Cover the bowl with plastic wrap and refrigerate for at least 1 hour or overnight.
7.Preheat the oven to 375°F (190°C) and grease a 12-cup muffin tin well with butter.
8.Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
9.Bake for 18-20 minutes, or until the Financiers are golden brown and a toothpick inserted into the center comes out clean.
