Ingredients

500 g filet of beef , trimmed of all visible fat and sinew
4 tablespoons coarse grain mustard
4 teaspoons black peppercorns , crushed
4 teaspoons black mustard seeds , crushed ( I use brown if that 's what 's in the cupboard )
4 teaspoons vegetable oil
1 bunch flat leaf parsley
2 teaspoons capers , drained
1 clove garlic , crushed
2 anchovies , drained
20 ml lemon juice
2 slices bread , crusts trimmed
60 ml olive oil

Instructions

1.Preheat oven to 200°C.
2.In a small saucepan, mix together the mustard, black peppercorns, black mustard seeds and vegetable oil.
3.Rub the beef fillet with the mustard mixture and put it into the oven to roast for about 25 minutes for a medium rare finish.
4.While the beef is cooking, make the salsa verde by placing the roughly chopped parsley, capers, garlic, anchovies, lemon juice and crustless bread into a food processor and pulse until the mixture is finely chopped.
5.Gradually add in the olive oil until the salsa verde is combined and smooth.
6.When the beef is cooked to your liking, remove from the oven and leave to rest for about 10 minutes.
7.Slice the beef and serve with the salsa verde on top.
