Ingredients

4 filet of beef
8 shallots
15 g butter
1 garlic clove , sliced
100 g fresh shiitake mushrooms
50 ml port wine
1 orange , zest of
500 ml fresh beef stock
30 g tomato puree
1 head celeriac , cooked
100 ml cream
salt and pepper

Instructions

1.Preheat your oven to 200°C/400°F.
2.Heat a large frying pan on high heat. Add olive oil and fry the beef fillets for 3-5 minutes until browned. Place them in the oven for a further 5-8 minutes for medium rare and 8-10 minutes for medium-well.
3.Using the same frying pan, turn down the heat and add in the butter, shallots, garlic and sliced mushrooms. Cook for 6-7 minutes on low heat, stirring occasionally.
4.Add in the tomato puree, beef stock, port wine and zest of one orange. Increase heat and bring to the boil. Reduce the heat and let it simmer for 15-20 minutes until it has reduced in volume by half.
5.Cut cooked celeriac into small cubes and place it in a pot with 100 ml cream. Warm for 5-7 minutes on low heat.
6.Season the beef with salt and pepper to taste and let it rest for 5 minutes before serving. Serve the beef with the celeriac puree and sauce.
