Instructions

.Preheat the oven to 350°F. Line a muffin tin with 18 paper liners.
.In a large mixing bowl, whisk together the sugar, flour, cocoa powder, baking powder, baking soda, and salt.
.Add the milk, melted butter, eggs, and almond extract to the dry ingredients, whisking until the batter is smooth. Stir in the boiling water, then stir in the coconut and pecans.
.Use a spoon or scoop to fill each muffin cup three-quarters full with the batter.
.Bake for 20-25 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
.While the cupcakes are baking, make the filling. In a saucepan set over medium heat, combine the sweetened condensed milk and chocolate pieces. Cook, stirring constantly, until the chocolate has melted and the mixture is smooth. Remove from heat, stir in the heavy cream, then transfer to a bowl to cool.
.Once the cupcakes and filling are both cool, use a small knife or cupcake corer to create a well in the center of each cupcake. Spoon the chocolate filling into a piping bag fitted with a large round tip, and pipe the filling into the center of each cupcake.
.Serve and enjoy!
