2 hard-boiled eggs , peeled , or to taste
2 tablespoons chopped spring onions , or to taste

Instructions

1.Rinse uncooked rice with water and drain excess water.
2.In a pot over high heat, bring water to a rolling boil.
3.Add rice to the boiling water and continue cooking while occasionally stirring for about 25 minutes or until the rice grains break and the mixture becomes thick and soupy.
4.Reduce heat to low, cover, and continue cooking until the rice fully breaks down and forms a porridge-like consistency.
5.Meanwhile, heat vegetable oil in a pan.
6.Add minced garlic, ginger, and onion then sauté until fragrant.
7.Add cubed chicken breasts and cook until brown.
8.Season with fish sauce, ground black pepper, and annatto powder then stir.
9.Remove from heat.
10.Serve hot congee in bowls and top with the chicken, sliced hard-boiled eggs, and spring onions.
