1/4 cup sliced sweet pickle
3 stalks leeks , cut into 1 inch pieces
2 tablespoons cornstarch , dissolved in
2 tablespoons water

Instructions

1.Peel and devein the fresh shrimp. Finely chop the shrimp and mix with salt, pepper, all-purpose flour, beaten eggs, green onion, and red pepper flakes (optional).
2.In a pan, heat oil for frying. Form the shrimp mixture into small balls and fry until golden brown.
3.In a separate pot, mix vinegar, sugar, soy sauce, catsup, water, and oil. Add sliced and diced carrots, red bell pepper, fresh ginger, sweet pickle, and leeks. Simmer for a few minutes or until the sauce thickens.
4.Add the fried shrimp balls to the sauce and coat thoroughly. Serve the dish hot and enjoy!
