Filipino Napoleanes is a fresh take on the classic Napoleon dessert. It originated in the Philippines and is a popular treat at special occasions, such as weddings and holiday celebrations. The crispy layers of the pastry are similar to the French napoleon pastry; however, the Filipino version has a velvety smooth custard filling, infused with a hint of lime. The pastry is a tedious process with many layers of thin dough separated by the creamy filling. It is common to drizzle the pastry with a sweet confectioners' sugar glaze, which adds a perfect finishing touch to the dessert. It's a lovely alternative to traditional desserts and an excellent way to try something new and exciting in the kitchen.

Instructions

.In a large mixing bowl, combine the flour, salt, and chilled butter using a pastry cutter or fork until it forms a crumbly mixture.
.Drizzle in the cold water and lime juice while stirring, knead the dough together with your hands to form a smooth ball shape.
.Cut the dough in half, form the halves into discs, and wrap them in plastic. Chill the dough for an hour.
.Preheat the oven to 400°F and line two baking sheets with parchment paper.
.On a floured surface, roll out each chilled disc of dough to 1/8 inch thickness.
.Cut the dough into individual square-shaped portions and place them on the baking sheets. Bake them in the preheated oven for 10-12 minutes.
.In a small saucepan, heat the evaporated milk over medium-high heat. In a separate mixing bowl, whisk the egg yolks, sugar, and flour together. Slowly pour the hot milk into the egg mixture, stirring continuously to prevent curdling.
.Return the mixture to the saucepan and cook over medium heat until it thickens, this will take around 10 minutes. Stir regularly. Turn off heat and mix in the butter. Let it cool down to room temperature.
.In a separate small bowl, whisk the confectioners' sugar, vanilla extract, and boiling water together until it becomes a smooth drizzle.
.Assemble the napoleon by spreading the cooled custard filling on top of one square, top with another square layer, and repeat to form a stack. Drizzle the mixture of the confectioners' sugar and allow it to cool before serving.
