Instructions

1.Wash chicken and pat dry. Rub chicken with salt, black pepper, and garlic.
2.Thread lemongrass throughout the chicken but do not bunch too tightly.
3.In a separate bowl, combine lemon and lime juice with the annatto seed-water mixture.
4.Brush the chicken with the annatto mixture and grill until cooked.
5.In a separate bowl, melt garlic butter and add chili pepper flakes and salt.
6.When the chicken is fully cooked, brush the chicken with the garlic butter mixture, coating each piece.
