Ingredients

4 beef tenderloin steaks
2 pasilla chiles
6 ripe tomatoes
1/2 large white onion
3 cloves peeled garlic
1 cup chicken stock
salt and pepper
olive oil or peanut oil
2 teaspoons brown sugar
1/4 cup fresh cilantro
1/4 cup grated Cotija cheese ( can use dry feta )
avocado relish ( Avocado Relish )

Instructions

1.Preheat oven to 400°F
2.Roast the tomatoes, onion, peeled garlic, and pasilla chiles in the oven until they are blackened. Then, put them in a cooking pot and add chicken stock, brown sugar, and salt and pepper to taste. Bring to the boil, then reduce heat and let simmer for 10 minutes.
3.Blend the mixture until it is smooth using a blender or hand immersion blender.
4.Season the steaks with salt and black pepper on both sides. In a skillet, heat olive oil or peanut oil over high heat then add the steaks. Cook for approximately 3 to 5 minutes per side until the outside of the beef is browned and cooked as desired.
5.Pour the sauce over the steaks, and top with grated Cotija cheese and cilantro. Serve with Avocado relish on the side.
