Ingredients

1 1/8 cups red wine ( cabernet or pinot noir )
1 cup balsamic vinegar
1 shallot , peeled and halved
6 tablespoons unsalted butter , cut into 12 pieces
salt & freshly ground black pepper
extra virgin olive oil
1 large white onion , peeled and sliced 1/4-inch thick
2 medium zucchini , trimmed and cut diagonally into 3/4-inch slices

Instructions

1.In a blender, puree the red wine, balsamic vinegar, and shallot until it becomes a smooth liquid. Set aside.

3.Place the filet mignon on the grill and cook for 3-5 minutes per side, or until desired doneness is reached. Let the meat rest.
4.In a large skillet over medium-high heat, heat the remaining olive oil. Add the sliced onions and zucchini and cook, stirring occasionally, until charred and slightly softened.
5.Add the balsamic-wine mixture to the skillet and bring to a boil. Reduce heat and simmer for 10-15 minutes until the sauce thickens.
6.Stir in the butter until melted and season with salt and pepper to taste. Serve the filet mignon on top of the charred onions and zucchini, with the balsamic sauce spooned over the top.
