Ingredients

2 tablespoons butter
1 1/2 tablespoons vegetable oil
4 high quality filet of beef
10 ounces fresh mushrooms , in 1/4 to 1/2- inch thick slices ( I use whatever looks fresh )
4 shallots , finely chopped
1/2 cup dry red wine
3 tablespoons cognac ( or brandy )
1/4 cup demi-glace or 1/4 cup beef stock
2 tablespoons softened butter
sea salt & freshly ground black pepper
crumbled Roquefort cheese ( optional )
2 tablespoons snipped fresh parsley
fresh rosemary , for garnish

Instructions

1.Preheat broiler.
2.Heat oil with butter in a large heavy ovenproof skillet over high heat until foam subsides.
3.Sear steaks, turning once, until well browned, about 6 minutes total.
4.Season with salt and pepper and transfer skillet to middle of oven.
5.Cook 8 to 10 minutes for medium rare.
6.Transfer steaks to a platter and keep warm, loosely covered with foil.
7.Pour off all but 2 tablespoons fat from skillet (or add enough oil to achieve this amount), then cook mushrooms and shallots over high heat, stirring occasionally, until they are brown and any liquid given off is evaporated, 6 to 8 minutes.
8.Remove skillet from heat and add wine, brandy, and demi-glace.
9.Boil mixture, stirring and scraping up brown bits, until reduced by about half.
10.Remove from heat, then swirl in remaining 2 tablespoons butter.
11.Season sauce with salt and pepper and pour over steaks.
12.Serve steaks with Roquefort cheese (optional), parsley and rosemary for garnish.
