Ingredients

2 cups white sugar
1 cup packed brown sugar
3 lbs figs , washed and quartered
1/4 cup bottled lemon juice
1/3 cup Licor 43

Instructions

1.Combine sugars and figs in a large nonreactive pot and stir to mix.
2.Let stand for 20 minutes to bring out the juices in the figs.
3.Add lemon juice and stir well. Bring the mixture to a boil over high heat, stirring constantly.
4.Reduce heat to medium and stir in Licor 43. Cook at a low boil, stirring frequently until the mixture thickens and the temperature reaches 105°C (220°F) on a candy thermometer, about 25 minutes.
5.Remove the pot from heat and skim off any foam on the surface of the jam with a metal spoon.
6.Ladle the hot jam into hot, sterilized jars, leaving 1/4-inch headspace and seal. Process in a boiling-water bath for 10 minutes.
