Ingredients

1 1/3 cups all-purpose flour
2/3 cup whole wheat flour
2 teaspoons baking powder
1 teaspoon baking soda
1 pinch salt

2 tablespoons butter , chilled and finely diced
160 g dried figs , very finely chopped or sliced
4 tablespoons water
2 tablespoons skim milk

Instructions

1.Preheat the oven to 400°F and line a baking sheet with parchment paper.
2.In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and ground ginger. If using, add in the finely minced crystallized ginger.
3.Add the chilled and diced butter into the flour mixture and mix well using your fingertips to form a crumbly texture.
4.Next, add the finely chopped or sliced dried figs and mix well.
5.Pour the water and skim milk over the mixture and stir until a dough forms. Do not overmix.
6.On a lightly floured surface, knead the dough briefly and shape into a circle about 7 inches in diameter and 1 inch thick. Cut the circle into 8 triangular wedges.
7.Transfer the wedges onto the prepared baking sheet, leaving about 1 inch of space between each wedge. Brush the tops with a little bit of milk.
8.Bake in the oven for approximately 15 minutes, or until the scones turn golden brown. Remove from the oven and let them cool down for a few minutes before serving.
