1 onion , peeled and chopped
2 garlic cloves , peeled and chopped
2 tablespoons plain flour , seasoned
2 1/4 lbs stewing beef , diced
2 tablespoons tomato paste
4 carrots , peeled and cut into huge chunks
4 parsnips , peeled and cut into huge chunks
1 cup red wine
1 1/4 cups beef stock
1 orange , zest of , only
salt & freshly ground black pepper

Instructions

1.Heat the olive oil in a large, heavy-bottomed pan and gently fry the onion and garlic for 5 minutes or until soft and translucent.
2.Toss the seasoned flour with the beef, and then add to the pan with the onion and garlic. Fry until browned on all sides.
3.Add the tomato paste, red wine, beef stock, and orange zest. Bring to a simmer and cook for 1 1/2 hours or until the stew beef is tender.
4.Add the carrots and parsnips and cook for a further 30 minutes until the vegetables are tender and the beef is cooked through.
5.Season with salt and freshly ground black pepper to taste.
