Ingredients

2 lbs pork tongue
1 can tomato sauce
3 tablespoons catsup
3 tablespoons vinegar
1 1/2 cups potatoes , cut into strips and fried
1 medium onion , sliced
1/2 cup canned mushroom , halved
1 red bell pepper , cut into rings
1 1/4 cups tongue stock
2 tablespoons brown sugar
1/2 teaspoon hot sauce
1 bay leaf , crushed
3 tablespoons margarine or 3 tablespoons oil
1 tablespoon lime juice
soy sauce
salt and pepper
Fiesta Lengua (Tongue) is a traditional Filipino dish that is usually served during special occasions. Instructions

1.Rinse the pork tongue and place it in a pot with enough water to cover it. Bring the water to a boil and then lower the heat so that it simmers. Cook the tongue for about 2-3 hours or until tender.
2.Remove the tongue from the pot. When it has cooled down, peel off the skin. Slice the meat into pieces and set aside.
3.Combine the tomato sauce, catsup, vinegar, brown sugar, hot sauce, and tongue stock in a bowl. Stir well and set aside.
4.In another pan, heat the margarine or oil. Sauté the onions until transparent and then add the mushrooms and red bell pepper. Stir for a minute before adding the sliced pork tongue.
5.Pour the sauce mixture into the pan and add the bay leaf. Stir well. Add soy sauce, salt, and pepper to taste.
6.Bring to a boil and then lower the heat. Simmer for 5-7 minutes or until the sauce has thickened.
7.Add the fried potatoes and lime juice. Cook for a minute before serving.
