Ingredients

3 chicken breast halves
1 cup onion , chopped
1 garlic clove , chopped
1 can diced tomatoes with mild green chilies , with juice
1 cup tomato juice
1 teaspoon chipotle chile , minced
1 tablespoon chili powder
1 teaspoon ground cumin
1/3 cup uncooked medium barley
1/3 cup uncooked medium grain brown rice
fresh ground black pepper , to taste
cheese ( optional )
sour cream ( optional )
This Fiesta Chicken with Barley and Brown Rice is a one-pot meal that is easy to prepare and packed with flavor. Instructions

1.Rinse the uncooked barley and brown rice with cold water and then add into the crock pot.
