Instructions

1.Preheat oven to 375°F. Coat an 8-inch square baking dish with cooking spray.
2.In a medium saucepan, bring chicken broth to a simmer. Add chicken breast, reduce heat to low, cover, and poach until just cooked through, about 15 minutes. Transfer chicken to a cutting board and let cool.
3.In the same saucepan, cook onion over medium heat until translucent, about 3 minutes. Add red pepper and cook for another 3 minutes. Remove from heat and let cool.
4.Shred the chicken with a fork. In a large bowl, combine shredded chicken, black beans, corn, cilantro, green chilies, and 2 cups of Cheddar cheese. Mix well.

8.Bake for 30 minutes or until enchiladas are hot and cheese is melted and bubbly. Let cool for 5–10 minutes before serving.
