Ingredients

1 tablespoon butter
2 tablespoons sunflower oil
1 cinnamon stick
1 teaspoon ground cumin
1 teaspoon garlic , finely chopped
3 medium onions , peeled and finely chopped
1 teaspoon fresh gingerroot , finely chopped
1 plump green chili pepper , deseeded and finely chopped
500 ml passata ( sieved tomatoes , 17 oz . )
900 g boneless skinless chicken breasts , cut into large cubes
1/2 teaspoon hot chili powder
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1 teaspoon curry powder
1/2 teaspoon garam masala
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper , coarsely ground
1 tablespoon fresh lemon juice
100 ml just-boiled water
1 tablespoon tomato puree
fresh coriander , to garnish

Instructions

1.On medium heat, heat butter and sunflower oil in a large pan.
2.Add cinnamon stick, cumin seeds and garlic and stir for 30 seconds.
3.Add onions, ginger root and green chili pepper and saute for 5-6 minutes.
4.Add passata, chicken, chili powder, cumin, coriander, curry powder, garam masala, salt, black pepper, and lemon juice. Mix well.
5.Add hot water and tomato puree and stir. Cover and cook for 20-25 minutes.
6.Garnish with fresh coriander.
7.Serve hot with steamed rice or bread.
