Ingredients

1 lb uncooked ham , roughly chopped
2 large cooking apples , peeled cored and diced
1 package shortcrust pastry
1 large onion , chopped
1/4 pint cider
1/2 cup heavy cream
1 cup grated strong cheddar cheese
1 tablespoon flat leaf parsley , chopped
1 tablespoon cornflour
1 egg , beaten
Fidget Pie is a traditional dish from the county of Lincolnshire in England. The pie has a unique name and history as it was supposedly named after the phrase 'Bye, Fidget, bye, fidget, God send thee thy right midget', which was a popular saying among the English working class in the 18th century. The phrase was a farewell wish for someone to find their rightful place in the world. Fidget Pie, therefore, was a cheap and filling dish that allowed people to stretch their ingredients further.

Instructions

1.Preheat the oven to 350°F. Roll out half of the shortcrust pastry and use it to line a pie dish.
2.Mix the ham, apple, and onion together in a bowl and spread the mixture into the pastry-lined dish.
3.Mix the cider, cream, cheese, parsley, and cornflour in a separate bowl and pour the mixture over the ham mixture.
4.Roll out the remaining pastry to cover the pie and seal the edges. Brush the top with beaten egg and make 3 small slits on the top for ventilation.
5.Bake the pie for 45-50 minutes, until the pastry is golden brown and the filling is cooked through.
