4 cups dried garbanzo beans
1 bunch parsley
1 white onion , cut into chunks
1/8 teaspoon black pepper
1 -2 tablespoon cumin powder
1 -2 tablespoon ground coriander
1/2 tablespoon salt
3 garlic cloves , minced
2 teaspoons red sumaq ( or purple sumak )
safflower oil ( for frying ) or peanut oil ( for frying )
1 cup tahini paste
1/4 cup fresh parsley
4 medium tomatoes , diced very small
1/4 cup lemon juice
1 garlic clove
1 teaspoon salt

Instructions

1.Soak the dry garbanzo beans overnight or for at least 12 hours.
2.Drain the garbanzo beans and place them in a food processor. Add the parsley, white onion, black pepper, cumin powder, ground coriander, salt, minced garlic, and red sumaq and pulse until the mixture is thoroughly combined and resembles coarse sand. Transfer the mixture to a bowl and let it sit for 5 minutes.
3.While the mixture settles, make the tahini sauce. In a blender, blend together the tahini paste, fresh parsley, diced tomatoes, lemon juice, garlic clove, and salt, adding water as needed to achieve the desired consistency.
4.Heat the oil in a large frying pan over medium-high heat. Roll the falafel mixture into balls about the size of golf balls and add them to the hot oil. Fry the falafel balls until they are golden brown and crisp on the outside, about 3-5 minutes per side. Remove the falafel from the oil and drain them on a paper towel-lined plate.
5.Serve the falafel balls hot with the tahini sauce and enjoy!
