Ingredients

4 tomatoes
2 garlic cloves
1 teaspoon salt
1 dried hot red chili pepper , lightly roasted ( your choice-Thai , japones , even chipotle etc . )
2 tablespoons capers
3 tablespoons imported black olives
1 cup arugula leaf , chopped ( also known as rocket )
3 tablespoons extra virgin olive oil
11 ounces fettuccine ( I used fresh locally made pasta ) or 11 ounces spaghetti ( I used fresh locally made pasta )
3 -4 tablespoons Cacio di Fossa cheese , grated ( Parmesan , pecorino-romano , gorgonzola can be subbed ) ( optional )
olive oil , for drizzling
cracked black pepper

Instructions

1.Begin by bringing a large pot of salted water to a boil.
2.While the water is boiling, core and chop the tomatoes into small pieces and mince the garlic cloves.
3.Add the pasta to the boiling water and cook according to the package instructions, or until al dente.
4.In a separate pan, heat the olive oil over medium heat.
5.Add the garlic to the pan and cook until fragrant, about 1 minute.
6.Add the chopped tomatoes, capers, olives, and roasted chili to the pan and cook until the tomatoes have broken down and the sauce is thickened, about 5-7 minutes.
7.Once the pasta is cooked, drain it and transfer it to a large serving bowl.
8.Add the tomato sauce to the pasta and toss to combine.
9.Add the chopped arugula to the bowl and toss again to combine.
10.Serve the pasta hot, topped with a drizzle of olive oil, grated cheese, and cracked black pepper to taste.
