Ingredients

1/2 lb fettuccine pasta
2 tablespoons olive oil
1 tablespoon garlic , chopped
6 medium mushrooms , sliced thin
1/4 red onion , julienned
1/4 cup white wine
1/4 cup chicken broth
1/2 grilled chicken breast , julienned
1 vine-ripened tomatoes , peeled , seeded and diced
6 basil leaves , chopped
salt and pepper
2 tablespoons butter
parmesan cheese ( to garnish )
green onion ( to garnish )

Instructions

1.Bring a large pot of salted water to boil. Add fettuccine and cook for 8-10 minutes or until al dente. Drain and set aside.
2.In a pan, heat the olive oil over medium-high heat. Add garlic, mushrooms and onion and saute until the mushrooms are cooked.
3.Deglaze the pan with white wine and let the liquid reduce by half. Add chicken broth and continue to cook until the sauce is reduced.
4.Add the julienned grilled chicken and diced vine-ripened tomatoes. Cook for another 1-2 minutes.
5.Add salt, pepper, butter and chopped basil and mix until combined thoroughly.
6.Serve with a sprinkling of parmesan cheese and chopped green onions on top.
