Ingredients

1 package fresh fettuccine

1 tablespoon butter
chopped green onion
2 tablespoons anchovy paste
1 cup sliced mushrooms
1 lb shrimp , peeled and deveined
1/2 cup white wine
2 tablespoons fresh parsley
1 tablespoon fresh oregano
1/2 teaspoon crushed red pepper flakes
1 diced plum tomatoes or can diced italian tomatoes
fresh shaved parmesan cheese

Instructions

1.Cook fettuccine according to package directions.

3.Add butter, green onion, anchovy paste, and sliced mushrooms. Cook for 2-3 minutes, until mushrooms are slightly softened.
4.Add the shrimp and white wine. Cook for another 2-3 minutes, until the shrimp are pink and cooked through.
5.Add the fresh parsley, oregano, crushed red pepper flakes, and diced tomato. Cook for an additional 1-2 minutes, until tomato is warmed through.
6.Serve the shrimp mixture over the cooked fettuccine, and top with fresh shaved Parmesan cheese.
