Ingredients

2 medium onions
2 tablespoons olive oil , plus extra for drizzling ( or oil from the tomatoes )
7 ounces feta cheese , crumbled
2 ounces breadcrumbs
1 red chili pepper , seeded and finely chopped
6 sun-dried tomatoes , in olive oil , drained and chopped
2 teaspoons thyme leaves , plus extra sprigs
2 tablespoons parsley , chopped
2 ounces walnut pieces , chopped
salt and pepper
1 egg , beaten
These Feta Stuffed Roasty Onions are a unique and flavorful take on traditional roasted onions. Instructions

1.Preheat the oven to 375°F.
2.Cut the tops of the onions, then slice off a bit of the bottom so they stand flat, but leave the root end intact because that's what will hold the filling in.
3.Peel the outer layer of the onions.
4.Use a melon baller or small spoon to remove the inside of the onions so there is a cavity for the filling.
5.Brush the insides of the onions with oil and put them in a baking dish.
6.Mix the remaining oil with the feta, breadcrumbs, chili, sundried tomatoes, thyme leaves, parsley, walnut pieces, salt, pepper, and beaten egg. Stuff the onions with the mixture.
7.Lightly drizzle more oil over the stuffed onions, add some extra sprigs of thyme on top, and cover with foil.
8.Bake the onions in the oven for 30 minutes with the foil on. Then remove the foil and bake for an additional 20-30 minutes until the onions and filling are golden brown.
