Ingredients

1 package cream cheese , softened
1 cup shredded monterey jack cheese
1/3 cup crumbled feta cheese
2 teaspoons chopped fresh oregano
4 6-inch flour tortillas
1/3 cup chopped ripe olives
2 tablespoons diced pimentos ( I used jarred roasted red pepper )
2 tablespoons thinly sliced green onions
Feta quesadillas are a spin on the classic chicken or beef quesadilla commonly found in Mexico and the United States. Feta quesadillas are made by stuffing tortillas with a mixture of feta cheese, cream cheese, and shredded Monterey Jack cheese, topped with chopped ripe olives, diced pimentos (roasted red pepper) and thinly sliced green onions. Instructions

1.In a mixing bowl, combine cream cheese, monterey jack cheese, feta cheese, and oregano. Mix well.
2.Spread cheese mixture on one half of each tortilla. Top with olives, pimentos, and green onions.
3.Fold the tortilla in half, press to seal.
4.Coat a skillet with cooking spray and heat over medium heat. Cook quesadillas for 2-3 minutes on each side or until golden brown and cheese is melted.
5.Cut into wedges. Serve immediately.
