10 baby red peppers or 5 full-size red peppers , halved
150 g feta
100 g ricotta cheese
2 tablespoons fresh parsley , chopped
1 tablespoon fresh dill , chopped
2 teaspoons lemon zest , finely grated
2 -4 garlic cloves , minced
fresh ground black pepper , to taste
1 1/4 cups fresh lemon juice
2 tablespoons extra virgin olive oil
2 cups watercress leaves , washed , dried , to serve

Instructions

1.Preheat the oven to 400°F (200°C)
2.Cut the tops off the red peppers and remove the seeds and membranes.
3.In a medium mixing bowl, combine ricotta, feta, parsley, dill, garlic, lemon zest, and black pepper.
4.Fill each red pepper with the cheese mixture.
5.Place the red peppers in a baking dish, and pour lemon juice and olive oil over the peppers.
6.Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
7.Remove the foil from the baking dish and continue to bake for 5-10 minutes, or until the peppers are fully cooked.
8.Serve warm with fresh watercress leaves.
