Ingredients

8 large cabbage leaves
1 cup uncooked basmati rice
1 unwaxed lemon , zested
4 large spring onions , chopped
1/3 cup pine nuts
3 tablespoons olive oil
4 tablespoons chopped mint
1/2 teaspoon fresh thyme , chopped
100 g feta cheese
salt and pepper
1/2 vegetable stock cubes or 1/2 chicken stock cube
1/2 cucumber , grated
1 clove garlic , minced
2 tablespoons coarsely chopped coriander
1 cup yoghurt
The Feta and Lemon Cabbage Rolls with Coriander Tzatziki is a filling and healthy dish that can be enjoyed as a main course in any meal. Instructions

1.Preheat the oven to gas mark 6/200°C (180°C in a fan oven).
2.Put a large saucepan of water on to boil.
3.Once boiling, add a pinch of salt and blanch the cabbage leaves for a couple of minutes until they have wilted and are flexible. Remove them from the water and rinse under cold water until they are cool enough to handle. Cut off the tough central stem.
4.Cook the basmati rice in vegetable or chicken stock and unsalted water.
5.In a frying pan, fry the spring onions and pine nuts in olive oil for a couple of minutes until cooked.
6.Combine the cooked rice, lemon zest, mint, thyme, feta, spring onions, pine nuts, salt and pepper in a bowl.
7.Take a cabbage leaf and lay it flat on a clean surface. Place a spoonful of rice mixture near the bottom of the leaf. Fold the bottom of the leaf over the mixture, then fold in the sides, and then roll up.
8.Repeat for the remaining leaves and mixture to create 8 rolls.
9.Place the rolls in a baking dish and cover with foil.
10.Bake in the oven for 20-25 minutes. Remove the foil and bake for a further 10 minutes if desired.
11.To make the coriander tzatziki, squeeze as much water from the grated cucumber as possible. Combine the squeezed cucumber and all other ingredients in a bowl and mix well. Serve with the cabbage rolls.
