Ingredients

1 1/2 cups glace cherries
2 cups natural almonds
1 cup sultana
1 sheet frozen shortcrust pastry or 1 sheet frozen gluten-free shortcrust pastry
100 g butter
1/3 cup maple syrup or 1/3 cup golden syrup
2 eggs
1 teaspoon vanilla essence
2 tablespoons plain flour or 2 tablespoons gluten-free flour
80 g dark chocolate , to decorate ( optional )

Instructions

1.Preheat oven to 180°C.
2.In a large bowl, combine glace cherries, natural almonds and sultana.
3.Process pastry in food processor until roughly chopped, add to bowl with fruit and nuts.
4.Melt butter in microwave, add maple syrup, eggs and vanilla essence, mix well.
5.Add flour to egg mixture, stir until combined, add to bowl with fruit and nuts and mix well.
6.Grease lamington tin and line base with baking paper, spread fruit mixture evenly into tin.
7.Bake for 25 to 30 minutes or until golden brown. Remove from oven and cool in tin.
8.For decoration, melt dark chocolate in microwave and drizzle over cooled slice.
