Ingredients

125 g lexia raisins
200 ml madeira wine
75 g parma ham , thinly sliced
30 ml parsley , roughly chopped
1 1/8 kg filet of beef
350 g aubergines
100 ml olive oil ( approx )
700 g shallots or 1 small onion
1 teaspoon ground ginger
1 teaspoon allspice
1 tablespoon light muscovado sugar
150 ml beef stock
The Festive Fillet of Beef is a luxurious and indulgent dish, perfect for a special occasion or celebration. The combination of the rich beef, sweet raisins, and aromatic spices make this dish a standout meal that will impress your guests. Instructions

1.Preheat the oven to 200C/400F/Gas 6.
2.Soak the raisins in the madeira wine for 15 minutes, then drain.
3.Lay the slices of Parma ham on a sheet of cling film, overlapping them slightly.
4.Sprinkle half of the parsley over the ham.
5.Season the meat with black pepper and lay it on top of the ham.
6.Scatter the remaining parsley over the meat and arrange the soaked raisins on top.
7.Fold the cling film over the meat, sealing it in a package.
8.Roast the beef in the preheated oven for 35 minutes, then remove from the oven and leave to rest in a warm place for 10 minutes.
9.Cut the aubergines into bite-sized pieces and toss with enough olive oil to coat them.
10.Cut the shallots in half and toss with a little olive oil, the ginger, allspice, and muscovado sugar.
11.Place the aubergines and shallots on a baking tray and roast in the oven for 25-30 minutes, or until golden brown.
12.Heat the beef stock in a pan and stir in the cooking juices from the beef.
13.Serve the beef sliced, with the roasted aubergines and shallots on the side. Drizzle over the hot beef stock and serve immediately.
